Ingredients
2 tbsp olive oil
1 tsp chili powder
1/2 tsp cumin
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion poweder
1/2 tsp salt
a few grinds of black pepper
1/8 tsp cayenne pepper (if desired)
2 tsp lime juice
24 oz flank steak, thinly sliced; or pre-thinly sliced steak
1 cup white onion, thinly slced
1 1/2 cup bell pepper, thinly sliced
24 oz French fries
1 cup Mexican blend cheese, shredded
Garnish: sour cream, avocado/guacamole, lettuce, tomato, salsa, lime wedges, hot sauce
Directions
In a medium bowl, add 1 tablespoon of olive oil, seasonings, lime juice, and steak. Combine. Cover with plastic wrap sit in refrigerator for 30 minutes to an hour, or overnight.
Preheat oven to 400 degrees. Line baking sheet with aluminum foil.
Place fries in a single layer on baking sheet. Bake for 25 minutes or until golden brown.
While fries bake, add 1 tablespoon of olive oil to large skillet. On medium heat, add onions and peppers. Stirring frequently, sauté for 5-7 minutes or until soften and a little charred. Transfer to plate.
In same skillet, add steak in a single later. Cook for 4 minutes, flipping halfway.
When fries are done baking, season with salt. Top fries with steak, followed by onions and peppers, then cheese. Broil for 1-2 minutes, or until cheese and melted.
Serve immediately and top with desired garnishes.
Notes:
Shredded cheese can be substituted with queso.
Marinate steak overnight to tenderize and build more flavors.
Squeeze a teaspoon of lime juice and a pinch of salt to sour cream.
Shred the cheese yourself to ensure a proper meltiness.
