Chili

Ingredients
1 tbsp olive oil
1 medium or large red onion, diced
1 poblano pepper, diced
1 lb ground beef
2 cloves garlic, minced
1 28 oz can tomato sauce
1 French’s chili-o seasoning packet
1 15 oz can black beans, undrained
1 15 oz can pinto beans, undrained
1 15 oz can corn, drained; or 1 10 oz bag frozen corn
1/2 cup fresh cilantro, roughly chopped
Salt, to taste
Garnish: Monterey Jack cheese, cilantro, corn tortilla strips, sour cream, diced red onion, hot sauce, avocado
Directions
In a large skillet, add olive oil. On medium heat, add onion and poblano and sauté until soften and onions are translucent, about 3-5 minutes. To pan, add ground beef and brown for 3-5 minutes, separating with a spatula. Once browned, drain excess oil. Add garlic and sauté for 1 minute or until fragrant. Transfer ground beef mixture to large pot.
Add tomato sauce and seasoning packet to pot with ground beef, combine. Cook on medium-high heat and come to a boil. Once boiling, turn heat to low. Let simmer for 10 minutes-45 minutes. Season with salt to taste.
Add beans with its liquid and corn, stir to combine. Simmer on low for another 5 minutes, or until corn and beans are heated throughly. Stir in cilantro. Serve hot and add toppings, if using.
Slow cooker:
In a large skillet, add olive oil. On medium heat, add onion and poblano and sauté until soften and onions are translucent, about 3-5 minutes. Transfer ground beef mixture to slow cooker.
Add tomato sauce and seasoning packet to slow cooker with ground beef, combine. Slow cook on high for 3-4 hours or low for 6-8 hours.
In the last 30 minutes of cooking, beans with its liquid and corn; stir to combine. Season with salt to taste. When cooking is finished, stir in cilantro. Serve hot and add toppings, if using.
Notes:
Simmer chili for 45 minutes to allow flavors to build for a more flavorful result.
